Continuing my exploration of Nordics, this week I present Prolog from Copenhagen, Denmark one of the most renowned Coffee Roasters in the region.
Prolog Café was founded in March 2016 by Sebastian Quistorff and Jonas Gehl in Kødbyen (Meat Packing District), Vesterbro. The space was originally intended to be temporary, but thanks to its stupendous success, this coffee bar became permanent and possibly, one of the most popular places to drink specialty coffee in Copenhagen. Following this success, Prolog opened a new coffee place in Østerbro later on.
Prolog’s motto is : "To celebrate our love for coffee, we celebrate you."
Their goal has always been quite simple: To give their guests and wholesale customers a better coffee experience.
They love to put in effort to make a great product & love to serve something of great quality to the people who visit them in Prolog coffee bar and to the coffee bars, restaurants, bakeries, etc. who use their coffee beans. That’s why they have their brand name, Prolog .. It’s always a beginning.

Needless to say, Prolog’s roastery is an essential part on this journey to provide an amazing coffee experience.
A wide understanding and repeatedly conscious work of roasting and tasting of their core product, coffee, constitutes an essential part of making a special coffee experience.
In terms of taste, what is a well roasted coffee to Prolog?

Coffee Category Symbols
This is something I noticed on Prolog’s coffee packaging and was curious to know what it means to their customers.
These are the new symbols they have introduced last year. Each of the four symbols highlights the different category of flavour and the different kind of experience you can have when drinking that particular coffee.
So, what are the flavour categories that we have chosen, and what are the new symbols that stand alongside them?
Bee Symbol - Round and Sweet : I tasted this in V60 Pour Over there and carried beans for home brewing.
These coffees are typically very balanced, low acidity coffees with flavor descriptors that are very traditional when you think of coffee. Flavors like dark chocolate, marzipan, and honey. This type of coffee that is very crowd-pleasing, that is enjoyed by young and old alike.
The symbol chosen for this category is the humble bee. The bee is such a generous and graceful insect. It goes about its day collecting nectar and pollen and produces wax and honey as a collective. The cyclical nature of this process is what makes it so round and sweet for us.
The second category of fruity is represented as a flower.
The third category is funky. Think of the night sky.
Last & fourth category is crazy. These are truly special coffees. Crazy in a way that makes you believe that it’s not coffee you were drinking at that moment.
What all four symbols have in common is that they are all elements of the natural world. All exist inside an interconnected ecosystem, depending on other elements of the natural world for them to thrive - Just like coffee. Coffee plants thrive best in a diverse environment, surrounded by forests with other plants species and wildlife. In this environment, all the interconnected systems contribute to rich, healthy soil, from which the coffee plants can receive the nutritional value they need to produce abundant, sweet fruits.
It’s the quality of this that ends up in your final cup when you drink your morning coffee. Prolog wants to appreciate the natural world and the gifts that it gives us. That’s why they’ve chosen these new symbols to appear on their coffee bags.
Colombia – Aponte Coffee
The Inga community of Aponte comprised of descendants of the ancient, pre-hispanic Incas. The Caturra variety has been planted in the Inga territory, on smallholder properties in the Resguardo Inga Aponte, at an average of 2150 meters above sea level.
This elevation, combined with the Galeras Volcano constantly shedding nutrient-rich ash, makes for an exceptionally complex and sweet coffee.
Producers process coffee on their own properties, drying Honey coffee in stacked raised bed solar dryers on their farms. This process reduces water used for washing coffee and complements the natural complexity of coffees from this special region.
Aponte is a round and sweet coffee with a classic Colombian profile. A really smooth drinking cup with great structure and great sweetness. Think apple pie and creamy caramel.
